One Pot Lamb Orzo

When you’re craving comfort food but don’t want to spend hours in the kitchen, this One Pot Lamb Orzo is your answer. Packed with rich lamb flavour, earthy spices, and creamy feta, this dish comes together quickly thanks to the help of JUX’s freeze-dried ingredients. Ingredients

  • 2 tbsp JUX Red Onion
  • 1 splash olive oil
  • 2 tsp JUX Garlic
  • 2 tsp JUX Oregano
  • 2 tsp ground cinnamon
  • 400g lean lamb mince
  • 500ml lamb stock
  • 1 tin chopped tomatoes
  • 200g orzo pasta
  • 100g feta cheese, cut into chunks
  • 2 tsp JUX Parsley
  • Salt and black pepper, to taste

Method

  1. Cook the lamb – Heat a splash of olive oil in a large pan over high heat. Add the lamb mince and cook until it starts to brown.

  2. Add the spices and aromatics – Stir in JUX Garlic, JUX Red Onion, JUX Oregano, and ground cinnamon. Let everything cook together for a minute or so until fragrant.

  3. Build the base – Pour in the chopped tomatoes and lamb stock, then season generously with salt and black pepper. Stir to combine, then let it simmer on a medium-low heat for about 30 minutes to develop those delicious flavours.

  4. Cook the orzo – Add the orzo pasta to the pan, stir it in, and let it cook for another 8–10 minutes, until the pasta is tender and has absorbed some of that rich broth.

  5. Finish and serve – Once the orzo is cooked, stir in chunks of feta cheese and sprinkle with JUX Parsley for a final burst of freshness. Serve immediately and enjoy that comforting, one-pot magic.
