Sabrina's Lovely Lamb Herb Kofte with Spiced Mint Butter

This is the easiest way to make ridiculously flavourful, herby kofte without all the chopping. Inspired by Sabrina Ghayour’s recipe, this version swaps out the knife work for JUX ingredients—so you get all the depth of flavour in way less time. Juicy lamb meatballs, a warm yoghurt sauce, and a buttery drizzle spiced with chilli and mint. No notes.

Ingredients

Herb Kofte

  • 500g lamb mince
  • 3 tbsp JUX Red Onion
  • 2 tsp JUX Garlic
  • 1 tsp pul biber chilli flakes
  • 1 tsp paprika
  • 1 tsp dried mint
  • 2 tbsp JUX Parsley
  • 2 tbsp JUX Dill
  • ¼ tsp bicarbonate of soda
  • Vegetable oil, for frying
  • 250g Greek yoghurt
  • Salt and pepper, to taste

Spiced Mint Butter

  • 50g butter
  • 1 tsp dried mint
  • 1 tsp pul biber chilli flakes

Method

  1. Make the kofte mix – Add the lamb, JUX Red Onion, JUX Garlic, pul biber, paprika, dried mint, JUX Parsley, JUX Dill, and bicarbonate of soda into a bowl. Season generously with salt and pepper and mix well with your hands until smooth. Roll into 35–40 small meatballs.

  2. Fry to perfection – Heat a drizzle of oil in a large pan over medium-high heat. Fry the kofte for 3–4 minutes on each side until golden brown and cooked through. If needed, cook them in batches to avoid overcrowding the pan. Transfer to a plate lined with kitchen paper.

  3. Warm the yoghurt – Meanwhile, warm the Greek yoghurt in a saucepan over low heat, seasoning with salt and pepper. Don’t let it boil—just heat it through gently.

  4. Make the spiced butter – In another pan, melt the butter and stir in the dried mint and pul biber chilli flakes. Let it sizzle for a few seconds until fragrant.

  5. Serve it up – Spread the warm yoghurt onto a plate, pile the kofte on top, and drizzle over the spiced butter. Scatter with extra JUX Dill and serve immediately.

This is best eaten with warm flatbreads for scooping, but honestly, they’re so good they might not make it to the plate.
